The Salmon is slow smoked for up to 40 hours in kilns fired with whole river red gum logs. Huon’s Banquet Sliced salmon is uniquely sliced horizontally by hand. Each long slice is fully trimmed by a dedicated smokehouse team, who cast their trained eyes over each and every slice to make sure they’re perfect.
